Real food summer detox: My three day salad-apalooza

For one reason or another, I have eaten a big salad for every meal over the past three days.

Boring and bland, you say? Think again. It’s not hard to see from the photos why my taste buds were delighted and my belly and brain were pleasantly satisfied too.

Curious about the circumstances around my three day salad-apalooza?

1. I receive a food box from a local farm. In it this week, among other things, was cabbage, kale, garlic scapes, green onions and chard. One of my favourite things about taking part in a farm share is how it automatically changes my eating behaviour for the better. From June until November, the odds that I’ll eat seasonal, local fare significantly increases. Why? Because that’s what I get, and I’m not a person who lets food go to waste. I might not buy this many veggies, but if they wind up in my food box you can bet I’ll find a way to use them. Even if that means eating nine salads in three days. 2. I don’t feel like heavy meals in hot and sticky weather. Salad is nice and light yet keeps me full for hours, the perfect combination for the dog days of summer. The best side effect of building all my meals around veggies, protein and healthy fat is that I have no sugar cravings. Zero. Zilch. Nada. There is really something to be said for feeding your body what it really craves…nutrient dense food.

Yeah for summer salads!

      Hi Marie, Great question. Many of these salads are recipe-less (my favourite way to cook!) — just throw a whole bunch of veggies together. I have included links to the recipes I do have instructions for at the bottom of the pictures. Carolyn
