As long as you have veggies, protein, and healthy fat on hand, you can make a delicious and nutritious meal without a recipe. Don’t believe me? Take a look at today’s Eat Real Food TV episode where I give you on a behind-the-scenes look at how I build most of my meals.
Now I want to hear from you. How can you use this concept of veggies, protein, and healthy fat to keep it simple in the meal planning department? I always love reading about what works for our readers.
Happy cooking!

Was that kimchi you added to the pan? Never thought of heating it.
It was actually Pyramid Farm sauerkraut!
Hi Carolyn. Really enjoyed your cooking episode. I have found this type of meal prep works really well for me too. I precook ground beef and turkey with lots of garlic, onions & celery & spices (curry, cayenne, chipotle or whatever). I freeze some and leave some in the refrigerator for quick access. I will stir fry veggies and combine or I will add the protein to pre-made (by me) purée soups. I usually have riced cauliflower in the freezer add the protein and stewed tomatoes that I often eat for breakfast. These are my no brainer meals and I usually plan 3 – 4 dinners per week. We hosted a real food fondue dinner last night that was a hit. We started with a salad, had beef, chicken & lots of veggies and used broth & cheese for the fondue. Was planning a chocolate fondue with fruit for dessert, but we decided we were full. I find you seldom over-eat at a fondue because your are not able to gobble up you dinner in a flash!
BTW, can you recommend a reliable heart rate monitor?
Enjoy your day
Glad you enjoyed the episode, Mary! It’s the easiest way I’ve found to meal plan, and I agree with you about having protein pre-cooked — that helps a lot. As for a heart rate monitor, I use the Polar H7 and I love it! Carolyn
Great to see how its done, you made it look as easy as it really is! I am wintering on the west coast, staying with family, so my cook-as-you-go has had to give way to (many!) more chefs in the kitchen…batch cooking is my new thing and lunch to go is always ready.
Way to go, Michelle! I do enjoy cooking from a recipe once in a while, but for day-to-day, I love the no-recipe, veggies/protein-in-a-pan kind of thing! Carolyn
