What should I eat for breakfast?
It’s arguably the most frequently asked question I get from people after they discover that cereal, French toast, and pancakes rank pretty low amongst nutrient-dense breakfast options.
After I put in my plug for veggie and meat-based omelettes, green smoothies, Greek yogurt topped with nuts, seeds, and fruit, or the classic bacon and eggs, I drop this little truth bomb… pancakes aren’t entirely off the menu. It’s possible to create some incredible tasting real food-approved pancakes. Seriously.
Why not try out your culinary skills with one of these pancake recipes? Or how about taking a Sunday morning to whip them all up? A pancake buffet of sorts. Any leftovers can be frozen for another day when you’re running late. Just stick them in that toaster you no longer use and top with some homemade sunflower seed butter before heading out the door.
