Serves: 6 servings
 
Ingredients
  • 3 chicken thighs (cooked, or uncooked), chopped
  • ½ large onion, chopped
  • 3 celery stalks, chopped
  • ½ large carrot, chopped
  • ½ cup water
  • 1 carton chicken broth
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp salt
Instructions
  1. Simmer all ingredients together in a large pot for ½ hour (add another ½ hr to the cook time if the chicken has not been pre cooked).

Total time:  1 hour
Serves: 6 servings
 
Ingredients
  • 1 cup celery, chopped
  • 1 cup carrot, chopped
  • 1 onion, diced
  • 1 cup mushrooms, sliced
  • 1 cup brussel sprouts, halved
  • 2 cups leftover roast beef, chopped
  • 1 x 900 ml carton of beef stock
  • 3 tbsp butter or coconut oil
  • Salt and pepper
  • 1 cup broccoli, chopped
  • Optional: Cauliflower, sweet potato – whatever is in your fridge!
Instructions
  1. Sauté celery, carrots, onion, mushrooms and a pinch of salt in butter or coconut oil for 5 minutes.
  2. Add brussel sprouts, roast beef and beef stock. Season with salt and pepper and simmer for ~45 minutes.
  3. Add broccoli and simmer 15 minutes longer.
  4. Add water if you prefer it more soupy, and salt and pepper to taste.

Primal PizzaPizza is one of the foods that can be a deal-breaker when switching to real food. Our society eats so much pizza that it’s often too daunting to imagine life without it. Ready for the good news? You can still enjoy this cultural staple by simply taking control of the crust with this recipe, and then loading on all of your favourite toppings just like normal. You’re welcome!

Serves: 4 servings
 
Ingredients
  • 3 eggs, whisked
  • ½ cup coconut milk
  • 2 tbsp garlic, minced
  • ¼ cup coconut flour
  • ¼ cup almond flour
  • 1 tsp baking powder
  • Salt and pepper to taste
  • Optional: herbs and spices such as basil, oregano, thyme or onion powder
  • 1 can tomato paste
  • Toppings of your choice: sausage, chicken, olives, sundried tomatoes, bell peppers, and cheese
Instructions
  1. Preheat oven to 350 F.
  2. Mix eggs, coconut milk, and garlic in a bowl and mix together well.
  3. Add remaining ingredients (except tomato paste and toppings) and stir until a smooth consistency is reached. (Note: it will be a bit runnier than traditional wheat flour dough.)
  4. Line baking sheet with parchment paper and spread mixture evenly to edges (~1/8" thick).
  5. Cook ~12-15 minutes or until crust is lightly browned and not sticky to touch.
  6. Spread with tomato paste and dress with favourite toppings.
  7. Cook another 10 minutes or until cheese melts and edges are not burnt.

Crab Cakes

Crab CakesThese succulent pan-fried crab cakes are fast, easy to make, and oh so delicious. And are you ready for the best part? They won’t crumble!

I like to use my homemade mayo, and I’ve even been known to combine equal parts crab and tuna (e.g. 1 cup each) for the same yummy outcome. If you really want to go all in by making everything from scratch, try my delicious homemade ketchup to create your seafood sauce.

Serves: 4 servings
 
Ingredients
  • 2 cups crab meat
  • 1 egg, whisked
  • 2 tbsp mayonnaise
  • ¼ cup shallots or onions, minced
  • Salt and pepper to taste
  • Seafood Sauce (3 parts ketchup to 1 part horseradish, add lemon juice to taste)
  • Optional garnish: chopped parsley/chives and/or lemon
Instructions
  1. In a large mixing bowl, combine all ingredients except seafood sauce, parsley/chives, and lemon.
  2. Form mixture into patties about the size of your palm.
  3. Place cakes into greased pan over medium heat and cook for 5-7 minutes per side.
  4. Top with seafood sauce, garnish with parsley, fresh chives or a lemon wedge.

Zucchini Muffins

Zucchini muffinsThese to-die-for treats are ideal for little kids and school lunches. I’ve known a few adults who can’t resist them either! And if you prefer them in brownie form, that works well too.

Ingredients
  • 1 cup sunflower seed butter (or nut butter if no allergies)
  • 1-1/2 cup zucchini, julienned
  • ¼ cup honey
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 cup dark chocolate chips
Instructions
  1. Preheat oven to 350F.
  2. Combine all ingredients into a large bowl and mix thoroughly.
  3. Pour into lined muffin cups for cupcakes/muffins, or a greased 9x9 baking pan for brownies.
  4. Bake for 30 minutes, or until a toothpick comes out clean.
