Chicken Caesar Salad

Chicken Casear Salad

Chicken Casear SaladCaesar salad is considered by many to be an all-time favourite. Minus the croutons, this classic salad is the perfect go-to starter.

Serves: 4 servings
 
Ingredients
  • 1 whole chicken, cooked in slow cooker
  • Salt & freshly ground pepper to taste
  • 1 head romaine lettuce
  • 2-4 cloves garlic, depending on taste
  • ¼ tsp dry mustard
  • 2 anchovies, minced
  • 3 capers, or to taste
  • ¼ cup olive oil
  • ¼ cup grated Parmesan cheese
  • 1 egg yolk
  • Juice of 1 lemon
Instructions
  1. Clean whole chicken -- including insides -- by running under cold water and patting dry.
  2. Place chicken in slow cooker and sprinkle with salt & pepper and other desired spices.
  3. Cook on low for 8 hours.
  4. Wash and dry the lettuce and place in plastic bag with paper towel until serving time.
  5. In a medium sized mason jar, mash garlic cloves. Add mustard, anchovies and capers. Mix together well.
  6. Drizzle olive oil down the side of the jar, turning it continuously.
  7. Add egg yolk and lemon juice. With top of mason jar on, shake well. Let sit until serving time (30 mins - 1 hr).
  8. Tear lettuce into bite-sized pieces and place in wooden salad bowl.
  9. Pour with desired amount of dressing. Toss lightly until all leaves are coated.
  10. Add the pepper and Parmesan and toss again.

  • 4-5 ripe mangos
  • 1⁄2 cup strawberries
  • 1⁄2 cup blueberries
  • 1 green pepper
  • 1 red pepper
  • 1⁄2 cucumber
  • 1 jalapeno pepper
  • Cilantro to taste
  • Juice of one lime
Instructions
  1. Mix all ingredients in a bowl and enjoy.

Avocado Dijon DressingIf you’ve ever done your own fridge purge, you probably have a deeper understanding of just how many of our favourite dressings, condiments, and marinades contain substantial amounts of sugar and polyunsaturated oils – usually disguised under names such as soybean oil and canola oil, high fructose corn syrup, glucose-fructose, modified corn starch, xanthan gum.

Enter … homemade avocado dijon dressing! Enjoy this rich and tasty dressing on your favourite salads, sides, and poultry.

Ingredients
  • ½ avocado pulp
  • ¼ cup Dijon mustard
  • 1 clove garlic, minced
  • 1 cup extra virgin olive oil
  • Sea salt and pepper to taste
Instructions
  1. Blend all ingredients except olive oil, sea salt and pepper in a food processor.
  2. With food processor still running, slowly pour in olive oil. And I mean very slowly (2-3 mins).
  3. Mix in sea salt and pepper to taste.

Taco Seasoning

Taco SeasoningSuper tasty and way better for you than Old El Paso, this simple homemade taco seasoning is a hit with both the kids and adults at my house. We use it in tacos (obviously!), frittatas, and even chicken.

Note: I typically double or triple this recipe every time I make it (that’s how much of a favourite it is).

Ingredients
  • 2-1/2 tbsp chili powder
  • 1-1/2 tbsp ground cumin
  • 1 tbsp sea salt
  • 1 tbsp dried oregano
Instructions
  1. Mix all of the ingredients together in a small bowl.
  2. Store in a jar in the pantry for up to 6 months.

(Nothing keeps the wait staff on their toes quite like that request.) Minus the croutons, this classic salad is the perfect go-to starter.

Serves: 2-3 servings
 
Ingredients
  • 2-4 cloves garlic, depending on taste
